Fully baked. Shipped without syrup.
Your baklava has already been prepared and baked by our kitchen. You are completing only the syrup stage at home. Do not rebake the product.

What you will need.
Measure every ingredient before heating. A kitchen scale and thermometer give the most consistent result.

From saucepan to pastry.
Temperature—not the clock—is the final measure of concentration. Pot width, stove power, batch size and altitude can all change the cooking time.

Prepare the baklava
Remove all packaging. Place the fully baked baklava in a clean, shallow, heat-resistant tray. The pastry must be at room temperature.

Dissolve the sugar
Place the listed water and sugar in the saucepan. Heat gently, stirring only until every sugar crystal has dissolved. Stop stirring before the mixture reaches a full boil.

Boil without stirring
Bring to a steady boil over medium heat. Do not stir once boiling. Keep the thermometer tip in the syrup without allowing it to touch the bottom of the pan.

Add the lemon
When the syrup reaches approximately 103–104°C / 217–219°F at sea level, add the listed lemon juice carefully. Continue boiling without stirring until the final target is reached.

Stop at the target
Remove the pan from the heat at 105°C / 221°F at sea level, or 5°C / 9°F above your local boiling point of water. Let vigorous bubbling settle for 30–45 seconds.

Pour slowly and evenly
Wearing heat-resistant gloves, pour the complete batch of hot syrup gradually over the room-temperature baklava. Follow the edges and pre-cut lines first, then move toward the centre in several controlled passes.

Rest before serving
Leave the tray uncovered and undisturbed for at least 4 hours. For the most even absorption, allow it to rest overnight at room temperature before serving.
Temperature control
Concentration matters.
Finish the syrup 5°C / 9°F above the temperature at which plain water boils in your kitchen.
105°C · 221°F
Sea-level target. At higher altitude, plain water boils below 100°C / 212°F. Measure your local boiling point and add 5°C / 9°F. Do not use 105°C automatically at high altitude.

Small details, better texture.
These precautions help preserve crisp upper layers while allowing the lower layers to absorb syrup evenly.
Do not use the shipping box as a tray.
Hot syrup must touch only a clean, food-safe and heat-resistant container.
Do not pour into one spot.
Follow the edges and cut lines, pausing briefly between passes for even absorption.
Do not cook by time alone.
Use the temperature target. Batch size, pan shape, stove power and altitude change cooking time.
Do not cover while hot.
Trapped steam softens the upper pastry. Leave the tray uncovered while it cools and rests.
